Akasan

Akasan or Aka100 is a very popular Haitian drink.  It is made with very fine corn flour, milk, anise, cinnamon, sugar.  It is cooked like a hot cereal. It is usually served at breakfast.  When done properly, Aka100 has the consistency of porridge, that can be consumed hot or cold.


Akasan
2cinnamon sticks
4anise Stars
1 cup of very fine corn flour
1 dash of salt
1 teaspoon of almond extract
2(12oz) of evaporated milk
 Fresh mint leaves for garnishing.

1. Boil 4 cups water with cinnamon and anise stars. Dilute corn flour in 1-cup cold water and dash of salt.
2. Slowly pour liquefied corn flour into boiling water.
3. stir constantly until it thickens but no more than 5 minutes, maintain heat at medium. Add almond extract and can of evaporated milk. Removed from heat and let stand for 2 minutes.
3. Place the mixture into a blender container. Blend on high for smoothness for one minute. Pour the Aka100 in cups and serve warm.Add evaporated milk and sugar or honey for taste. If preferred cold refrigerate.

Note: Remove anise star and cinnamon before serving.
